We invited our Friends over from Yonder Brewing and Blending for a collaboration. We decided to brew a 6.5% sour with a touch of fennel and re-ferment it on half a tonne of plums. We’ve got Mail is light and dry with a gentle tart fruitiness. The name ‘We’ve got mail’ is a reference to suppliers in the industry who confuse our companies by mistake, sending correspondence across to the wrong brewery. Yonder Beyond? Wander BeYonder? Wander Yonder?
