This sparkling is made using the Méthode Traditionnel, only with grapes. No added sulfites, spontaneous fermentation with wild yeasts and a light filtering using paper after the first fermentation. The only additions are yeast and sugar for the second fermentation. The second fermentation is made with a cork top and the wine is not disgorged - the wine contains the yeast, sealed with the original cork. It helps the wine to improve in complexity untill the moment it will be drunk.
