Brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. It pours a yellowed gold with a large, rocky head of foam. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, It's a thrilling expression of these classic hop varieties and of what happens when they?re combined with complex wood fermentation. S
