In fact, we have almost 2,000 of them in our backyard, each bringing its own unique twist to the world of craft beer. From the styles they produce to the ingredients they use, no two craft breweries are alike.

But for me, there’s a truly special breed of brewery that stands out—those run by solo entrepreneurs right here in Glasgow.

These entrepreneurs are the unsung heroes behind the pints we enjoy, pouring not just ingredients but their hearts and souls into each batch they produce. Every day is a balancing act—juggling the roles of brewer, delivery driver, marketer, accountant, and everything in between.

What sets their beers apart isn’t just the quality—it’s the unmistakable essence of hard work, dedication, and creativity that shines through with every sip. I’ve always believed that beer is more than just a drink—it’s a bridge. A bridge between people, stories, and memories. Just like the beers I mentioned last week, these three craft beers take me to different places, each carrying its own unique history and inspiration. Let’s dive into these brews and the craftsmanship behind them.

Discover Glasgow’s Best Craft Beer Bar: Dookit Brewing

Are ye even Scottish if you don’t know what a dookit is? Traditionally, these wee stone shelters housed pigeons, but these days, the name takes on a new lease of life through fermentation and hops. Welcome to Dookit Brewing.

Dookit is the brainchild of Harry Weskin, who was inspired to set up a craft brewery through his love of independent taprooms and the art of modern brewing. You can really see his creativity come through in his most recent beer, Clarks Lager.

While this beer honours the great tradition of German brewing techniques, it’s been beautifully crafted using UK hop varieties like Fuggle and Pilgrim. And to top it all off, it celebrates the unsung heroes of British hop farming and showcases Harry’s ability to not be pigeonholed by style parameters—pun intended, of course.

The malt backbone bursts with the aroma of freshly baked bread and a soft honey sweetness, while the hops provide balance with gentle bitterness and earthy, grassy tones, complemented by a subtle hint of berries. True to the Dookit spirit, this beer is crafted with small-batch care—using all-natural ingredients, minimal intervention, and no filtration, ensuring every bottle is a little slice of artisanal magic. The result? A lager that seamlessly combines tradition with a fresh, handcrafted twist.

Up Front Brewing: Craft Beer with a Twist in Glasgow

Next up is Up Front Brewing’s Das Ist Techno Sex—a name that certainly grabs your attention. But it’s the person behind it who truly steals the spotlight: Jake Griffin, owner and founder of the brewery. Jake’s career change might just be one of the most fascinating you’ll hear—moving from a PhD neuroscientist to head brewer. Now, that’s a shift you don’t see every day!

Much like the previous beer, Das Ist Techno Sex takes inspiration from a classic German style. But instead of the dry, crisp, and clean flavours of a traditional lager, this beer is all about its party-ready acidity, with the distinctive tang of a Gose (pronounced goes-uhhh).

The use of natural bacteria for lactic fermentation imparts a sharp yet balanced acidity, beautifully complemented by the addition of passionfruit and key lime. The Gose is further enhanced with pink Himalayan salt and Indian coriander seeds, while a dry-hopping of Citra adds an extra tropical kick.

Epochal Brewing: Crafting Complexity in Every Sip

Adding more brains to the mix is Gareth Young from Epochal Brewing. Once an academic philosopher, Gareth turned his deep appreciation for Scotland’s brewing history into a thriving craft brewery of his own.

All of Gareth’s beers are inspired by traditional Scottish brewing, with a touch of modernity to celebrate the craft beer scene of today. While his beers vary in style, ABV, and hop varieties, they all follow a unique formula: fermenting with the traditional brewing yeast Saccharomyces and finishing in oak barrels with the wild yeast Brettanomyces. This combination creates an irresistible blend of fruitiness and dryness that’s truly one-of-a-kind.

My most recent favourite is A Pleasant Tomb, which delivers flavours of fruity, yet bitter orange, followed by bone-dry pink grapefruit. And despite its 8.4% ABV, it leaves you craving more.

The real beauty of this beer lies in its versatility: it’s delicious fresh, but also has the potential to age like a fine wine. As the natural yeast continues to metabolise sugars and flavour compounds over time, it evolves, offering new and exciting flavours with every passing month.
