A blend of bittersweet cider apples collected from traditional Herefordshire orchards; keeved and bottle conditioned to a wonderful mousse. Showcases the quality of the regions traditional cider apples in a method of making that does not exist in the world of wine. You'll find a hazy amber liquid with classic Oliver's phenolics of tobacco and fruity spice, mixed with rich ripe autumnal apple. Nice pointing acidity, good length and full mouthfeel. Opens with a gentle pop. Fermented with wild yeasts.
