Dookit - Raseli | Fruited Sour

Inspired by Parveen’s Canteen & the Pakistani dessert called ‘kulfi’, Raseli is flavoured with alphonso and honey mangoes. A helluva lot of them: 230g per litre of beer to be precise. It is sweet and densely creamy, like the dessert, but lactose free. The cardamom flavour is there but not prominent, balancing the fruitiness and medium acidity with fragrant spiciness. Like the dessert it is a background note designed to elevate the floral aromatics. At the base is a mildly acidic kettle sour formed of sweeter malts, complex sugars, a notable amount of crystal malt and jaggery. This is a mango sour pushed to almost the max when it comes to flavour and consistency. A true challenge to create a densely creamy texture without cream or lactose. It is a kulfi sour in style: perhaps a spin off of mango lassi inspired beers and the trendy smoothie sour style. It is best served ice cold, fresh out the freezer, but be careful not to freeze! The name comes from a favourite punjabi restaurant of mine, which my grandad used to take me to when I was a boy. It was there where I discovered mango lassi and the beginning of a mild obsession with the delicious & refreshing drink.
