Dookit - St. Enoch: Mother Glasgow | Gruit Ale

Brewed in collaboration with Glasladies Beer Society to celebrate Glasgow's 850th anniversary. This hopless brew is the perfect bottle for the sunny season. Locally grown raspberries and freshly foraged elderflowers dominate the aromatics and the flavour profile. It harks back to ales of centuries past, but with modern tastes in mind; a small addition of bog myrtle, lemon balm & coriander offer up a subtle & floral bitterness. The beer was then naturally soured with our in house lactobacillus culture for a complementary tartness. It’s like a glass of blush rose has met a light elderflower ale. A sharp acidity with lots of fruit and floral characteristics permeate throughout, finishing with a snappy dryness. Expect very little bitterness. Have it as an easy drinking aperitif, or why not have in place of a glass of dry rose!
