This blended golden sour was brewed with locally harvested malts and fermented with a Brettanomyces-led mixed culture of yeast and bacteria. Honeybucket was made from a single batch of wort which was split between two fermenters, one fermented open, the other closed, producing two beers with subtly different characteristics. These were blended back together and refermented with raw blossom honey from an apiary on the Falkland Estate in Fife. The bees collect pollen from wildflowers, clover, balsam, apple and lime on this organic land, producing a rich, fragrant and complex honey. To this we also added fresh elderflower blossom foraged close by the brewery. All ingredients were harvested/foraged within 33 miles of the brewery.
