Northern Monk - OFS065 // Classic West Coast Double IPA

Closing our eyes and taking an imaginary tour around Hong KongÕs street markets flooded our senses with the deep red of lacquered roast ducks and Char Sui pork, and the heady smells of caramelising sugars melding with woody spices which recalled a seemingly unlikely comparison Ð the deep caramel bitter sweetness of West Coast IPA. WeÕve used Columbus, Centennial, Citra, Mosaic, Idaho 7 and Rakau and dialled it up to Imperial strength to recreate that sensory bombardment.
