Fermented using non-selected, wild, yeast. Whole berry fermented, 85% neutral French oak puncheons and 15% clay amphora. 32 days skin contact Full malolactic fermentation. Matured 6 months in the oak and clay vessels, 2 months stainless steel. Bottled without fining or filtration. Vegan friendly and bone dry. Alcohol:11.7% Residual Sugar:<2.0g/L TA: 5.39g/L pH: 3.53
